Why is it called steam beer?

Steam beer, also known as California Common, is a distinctive type of beer brewed using lager yeast while fermenting at a warmer temperature than a typical lager. It began in the 1800s when German and Eastern European immigrant brewers in California adopted the traditional lager brewing process but without the benefit of expensive, ice-cooled fermentation systems and lagering caves available in their old countries.

As a result, they fermented their beers at the warmer temperature typical of ales. To reduce the length of the process and create drinkable beer more quickly, they used a unique strain of lager yeast that was able to ferment at the warmer temperatures.

They also would kräusen or agitate fermenting beer with different temperatures to increase effervescence and carbonation in the beer to create an extra “steamy” character and an unusual flavor from the lager yeast.

Thus, the name “steam beer” was born.
